Description

Baron Eric de Rothschild once decided to build up a small reserve of cognac for his family and close friends. To do so, he chose
to work with Maison Maxime Trijol, a historic Cognac family who for several generations have been cultivating their own vines
alongside the distillation and ageing process.
This partnership continues to this day, much to the delight of lovers of very old cognac.

Terroir :

This cognac has been blended jointly by our teams and our partner’s master blenders, using eaux-de-vie
aged over fifty years, mainly from Grande Champagne (70%) and Borderies (30%).
Grande Champagne, located in the heart of the cognac vineyards, produces very fine eaux-de-vie with a
predominantly floral bouquet. These require long ageing.
The Borderies cru generally produces round, smooth eaux-de-vie with violet and iris aromas.

Elaboration :

The grapes are traditionally vinified to produce a dry white wine with a low alcohol content (9% vol.) and
high acidity, essential for the wine’s natural conservation. Chaptalisation and the addition of sulphur are
prohibited.
The base wine is then distilled using the principle of double distillation: the first toasting produces the
brouillis. The second heating refers to the distillation of the brouillis which, after discarding the products
from the beginning and end of distillation, produces the Cognac eau de vie. Distillation is completed no
later than 31 March of the year following the harvest. The eau de vie is then aged for several years in oak
barrels. It is during this ageing period, which can last several decades, that the eau de vie develops its aromas
and finesse and takes on its beautiful amber hue.

Tasting Notes :

Deep amber colour with mahogany highlights.
The nose is rich and concentrated, with floral notes of violets and both dried and candied fruit (apricot, prune).
On swirling, notes of balsamic, vanilla, cocoa powder and cigar box appear.
The palate is both powerful and elegant, combining fruity and balsamic aromas, with a pleasant, long and
incredibly persistent finish.
